ragi burfi

necessary ingredients

1 tbsp ragi flour
Jaggery 4 tsp
Almonds 2 grams
Cashew nuts 2 grams
milk 2 tsp
Ghee 1 tsp

Serve Size: 2 Ragi Barfi (15 minutes)

First of all, heat ghee in a pan and when it starts melting, add ragi flour until no lumps are visible. Now add jaggery to it and keep stirring continuously till the jaggery melts. Then add almond and cashew powder to it. When the mixture starts to thicken, add milk and keep stirring continuously. Now when the mixture becomes slightly hard and separates from the utensil, pour it into a flat mold of about 1 inch thickness. When it cools down, cut it into shapes and add almonds and cashews over it.

Ragi Uttapam

necessary ingredients

Ragi flour – 1/3 cup

Carrot – 1/4 cup

Dill leaves – 1 tsp

Tomato – 1/4 cup

Onion – 1/4 cup

Ghee – 1 tsp

Serve Size: 2 Ragi Uttapam (20 minutes)

To make Uttapam, first make a thick batter by mixing ragi flour with water and add salt and 1/4 tsp baking powder to it. Now heat the griddle and add ragi flour and cook till it turns golden brown on one side. Then sprinkle finely chopped onions, tomatoes, carrots and dill leaves in it and spread evenly on the dosa and cover the vegetables to cook. Now sprinkle ghee over the vegetables and turn the dosa to cook evenly. When they are cooked from both the sides, serve hot with coconut or peanut chutney.

Pancakes

necessary ingredients

Multi millet mix 1 tbsp
Wheat flour 1/3 cup
egg 1/4 cup
Jaggery 1 tbsp
milk 1/4 cup
butter 2 tsp

Serving Size: 3 Small Multi-Millet Pancakes (20 minutes)

Firstly mix the dry ingredients including multi millet mix and whole wheat flour and half teaspoon baking powder well. Now beat the egg well till it becomes frothy and then add jaggery powder and milk slowly. Now add the dry ingredients of multi millet mix and whole wheat to the wet ingredients and whisk till no lumps remain in the batter. Now heat a non-stick pan and put half a teaspoon of butter in it and pour the pancake batter in the pan. Cook it well from both the sides and serve it with maple syrup.

Note: You can increase the ingredients according to your family or people eating. The method of making and serving will remain the same.
